Menus are created using some of Anglesey's finest seasonal produce:

Starters

Seared King scallop
spiced crab cake, salt cod brandade

Earl Grey smoked duck,
crisp leg fritter, onion pastry, burnt orange

Smoked ox tongue, beetroot carpaccio
shallots & balsamic

Broccoli & blue cheese panna cotta
crisp tofu & herb salad

Citrus poached salmon
cucumber dill & lemon, crisp Anglesey feta
 
Open ravioli of ham hock
Waldorf salad & chartreuse grapes

Welsh beef fillet
braised oxtail, fondant potato, horseradish & vegetable crumble
peppercorn jus

Baked halibut & chorizo pave,
tomato fondue, parmesan & parsley potatoes 

Roast loin of Ogwen Valley lamb
wild mushroom farce, creamed leek porridge
harrisa spiced chick peas, coriander jus

Pan fried John Dory,
seafood fricassee, leek & mustard potato cake

Roast crown of poussin
seared foie gras, sage & onion sausage
carrots and beetroot

Garlic, onion & thyme gnocchi
tomato, wild mushrooms, shallots

Dessert

Roasted spiced plum,
almond tart, chocolate parfait

Date & pine nut pudding,
caramelised banana, chantilly cream

White chocolate & mango parfait,
passion fruit curd, sable biscuit
