Menus are created using some of Anglesey's finest seasonal produce:

Starters

Crab filo cannelloni
crisp pork belly, vichyssoise mousse

Sweet cured loin of lamb
leek porridge, spiced poached quails egg

Gorwydd Caerphilly cheese & chive soufflé
pear & walnut salad, parmesan foam

Paupiette of sole
saffron mussel velouté

Seared Anglesey king scallop
potato, kohlrabi, confit lemon
vanilla creme fraiche

Pant Ysgawn & beetroot cheesecake
goats cheese mousse,  marinated candy beetroot

Main Courses

Fillet of Welsh beef
‘meat & potato pie’, onion puree
 creamed cabbage, glazed vegetables
peppercorn jus

Squab pigeon, seared foie gras
sticky red cabbage, thyme fondant potatoes
carrot & vanilla puree, smoked butter liaison

Fillet of John Dory with brioche crumb
 camembert & chive ravioli

Loin of new spring lamb
curried roast leg, Caerphilly cheese croquette
baby leeks, spiced butternut squash

Pan seared sea trout
roast quail, herb risotto, asparagus
